槲皮素的性质及应用领域总结

槲皮素属黄酮类化合物存在于许多植物的花、叶、果实中多以甙的形式存在如芦丁(芸香甙)槲皮甙、金丝桃甙等经酸水解可得到槲皮素。槲皮素易溶于热乙醇(1:23),可溶于甲醇、乙酸乙酯、冰醋酸、吡啶、丙酮等,不溶于水、苯、乙醚、氯仿、石油醚等,碱性水溶液呈黄色,几乎不溶于水,乙醇溶液味很苦。

槲皮素的性质:

1.其外观呈黄色针状结晶性粉末状。

2.对热稳定,分解温度314℃。能提高食品中色素的耐光性,防止食品香味的改变。遇属离子会变色。

3.微溶于,易溶于碱性水溶液。栎皮酮及其衍生物是广泛存在于各种蔬菜和水果中的一类黄酮化合物。如洋葱、沙棘、山楂、槐、茶叶等。

4.具有抗自由基、抗氧化、抗菌、抗病毒、抗过敏等作用。用于猪油等时,各种抗氧指标与BHAPG相似。

5.因其23位间有双键,3′4′处有2个羟基,具有能作为金属螯合作用或油脂等氧化过程中产生的游离基团接受体的功能,因而能作为抗坏血或油脂的抗氧化剂有利尿作用。

槲皮素的应用:

1.抗氧化剂。主要用于油脂、饮料、冷饮、肉类加工制品。

2.一种天然染料。可用作介质染料。用于羊毛和棉,用铝盐得黄色,用铬盐得橄榄黄色,用锡盐得橙色,用铁盐得橄榄绿。耐皂洗很好,耐晒中等。
