UV-method for the determination of Glycerol in foodstuffs,
beverages and other materials

Principle:
(glycerokinase)
(1) Glycerol + ATP → L-glycerol-3-phosphate + ADP

(ADP-GK)
(2) ADP + D-glucose → G-6-P + AMP

(glucose-6-phosphate dehydrogenase)
(3) G-6-P + NAD⁺ → gluconate-6-phosphate + NADH + H⁺

Method:  Spectrophotometric at 340 nm
Reaction time:  ~ 7 min
Detection limit:  0.37 mg/L
